This cold-water crustacean differs from most crabs due to its colossal size and spiny body, produced by the calcifications that cover both its torso and legs. It is normally presented cooked and it is common to find it in Haute Cuisine. Regarding its culinary uses, its appreciated white meat makes it an exquisite delicacy.
